One-Pan Garlic Herb Steak (Printable)

Tender steak bites with garlic and herbs, cooked in one pan for a fast, savory summer meal. Gluten-free, low carb.

# What You Need:

→ Steak & Marinade

01 - 1 1/2 pounds sirloin steak, cut into 1-inch cubes
02 - 2 tablespoons olive oil
03 - 1 tablespoon Worcestershire sauce
04 - 1 teaspoon kosher salt
05 - 1/2 teaspoon freshly ground black pepper

→ Aromatics & Herbs

06 - 4 cloves garlic, minced
07 - 2 tablespoons unsalted butter
08 - 2 tablespoons fresh parsley, chopped
09 - 1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme

→ Optional Garnish

10 - Lemon wedges, for serving

# How To Make It:

01 - Combine the sirloin cubes with olive oil, Worcestershire sauce, salt, and pepper in a medium mixing bowl. Toss thoroughly to coat and let sit at room temperature for at least 10 minutes.
02 - Heat a large skillet, preferably cast iron, over medium-high heat until hot.
03 - Arrange steak cubes in a single layer; cook in batches if necessary. Sear undisturbed for 2-3 minutes, then turn and continue cooking for another 2 minutes, until browned and cooked through.
04 - Reduce heat to medium. Push steak bites to one side. Add butter and minced garlic to the empty side, stirring gently until the garlic is fragrant, about 30 seconds.
05 - Toss steak bites with the melted garlic butter. Sprinkle chopped parsley and thyme over the steak and toss to combine.
06 - Transfer steak bites to a serving platter. Garnish with lemon wedges as desired and serve immediately.

# Expert Tips:

01 -
  • This dish comes together faster than you can set the table, giving you more time for good conversation.
  • The buttery garlic and fresh herbs make each bite feel special even on busy nights.
02 -
  • Don’t rush or crowd the pan, or the steak will steam instead of crisp—a mistake I made once that turned bites chewy.
  • Adding the garlic a moment after the steak prevents it from burning, which completely transforms the flavor for the better.
03 -
  • Let the steak rest after cutting to prevent juices from leaking in the pan.
  • Toss herbs in at the very last minute—they stay fragrant and lively this way.
